My best friend sent this to me. <3 It can easily be made gluten free by using a cup for cup flour mix. Make sure that its one that will be good for frying, since it can be a blend of a lot of things sometimes the tiny grains of flour heat at different rates, and can cause it to taste burned.
2 Cups flour
2 TBSP water (for eggs)
1 TBSP salt
1 TSP pepper
1 TSP onion powder
1 TSP garlic powder
1 TSP paprika
1/2 TSP dry thyme
1/2 TSP oregeno
1/2 TSP rosemary
1/2 TSP marjoram
1/2 TSP dry sage
1/2 TSP dry basil
2lbs boneless chicken breasts
Mix all seasonings into bowl with flour.
Cut fat off chicken then cut chicken into half inch strips. You can keep them long but I cut them in half.
Set chicken strips aside covered up.
Prepare egg wash in separate bowl. Add the water in the eggs.
Preheat pan with any cooking oil of your choice. (Or use deep fryer) I used a 10 inch cooking skillet.
When oil is ready dip 1 strip into egg wash and into seasoning mixture. And repeat once again and then they go into the oil.
Let chicken fry until golden brown on both sides . About 5 minutes on each side depending on how high the heat is.
In this recipe I used 4 lbs of chicken so when making a larger batch you can just double up on all ingredients.
