Prior to Devin buying it, I have never had asparagus in my entire life. I am not even kidding a little. Asparagus always kind of grossed me out mostly by reputation. Though once we made this gluten free bacon asparagus casserole, I was hooked. I absolutely loved it. I am sure you’ve noticed that I primarily share recipes that my kids like. So needless to say they loved this.
I am a big fan of dump dishes. Like casseroles. Easy things I can make ahead of time, so that in the evening rush I am not taking the time away from my kids to make dinner. I make it in the day when baby is napping and Buggy is in school. It makes the very most sense to do it then.
8 Pieces of Bacon
10 Asparagus Stalks
1 Package of Gluten Free Noodles
1 tsp Garlic Power
Salt and Pepper (to taste)
For Cheese Sauce:
1 ½ C Cheese
2 tsp Corn Starch, 2 TBS water (mix before stirring in)
½ C Milk (Whole works the best
2TBS Butter (or Margarine)
Preheat the oven to 350.
Cook the gluten free noodles, and bacon as per instructions. We generally make the bacon to be more crispy so that it isn’t chewy after being in the oven.
I make the cheese sauce, noodles, and bacon at the same time.
While these things are cooking chop the asparagus into inch long pieces, or however long you prefer. Remember to keep checking and stirring the cheese sauce.
The noodles generally are done first so I drain them, and put them in the casserole dish on the side. Throw the asparagus into the dish with the noodles, stir in cheese sauce once it is done.
Chop the bacon to the desired size and stir that in too. Sprinkle some cheese on the top and put in the oven for 35 minutes.
Oven Temp: 350 Degree F. Oven Cook Time: 25 Minutes
